Sauteed Squash with Onions and Spices
Spice pattern: warming
This is a quick and delicious side dish that is a good way to use leftover baked winter squash.
Elements- 
  • 3-4 tbsp peanut oil
  • or peanut oil and butter
  • 1-2 tsp ginger finely chopped
  • 1 med onion chopped
  • ¼ tsp allspice
  • 1/8 tsp cardamom
  • 1/8 tsp cloves
  • ¼ tsp nutmeg
  • 1/8 tsp black pepper
  • ½ tsp salt or to taste
  • 2 c cooked winter squash (butternut or acorn), mashed
Description- 
 Heat the oil, add the ginger and onions and spices, cook until the onions are translucent. Add the mashed cooked squash and heat through, stirring occasionally. Serve. Variation: Add chopped pistachios. Or for a sweeter dish, add ¼ c raisins soaked in a cup in enough hot water to cover.
